Elderton has a tradition of releasing a Sparkling Shiraz every decade or so. The first such wine was a sparkling burgundy from the pressings of Pinot Noir in 1988. This was a quirky wine, originally made for the exclusive enjoyment of the Ashmead family at special occasions. It is time to celebrate with bubbles again, the 30th anniversary of acquiring property from the descendants of Samuel Elderton Tolley in 1979. The vibrance of Yarra Valley Chardonnay is dominated by a slightly larger component of savoury Pinot Noir, all grown to good local vineyards and fashioned into the cultivated French interpretation of Rosé. From parcels of Chambourcin grapes, hand picked off a block of vine that's surrounded by a growth of peppermint gum trees. Traditionally, Peppermint Paddock has always been difficult to cultivate and vines have struggled. Unfazed by the challenging microclime, Chambourcin has thrived. A unique hybrid grape that's known for its robustness, the Chambourcin vines of Peppermint Paddock are often left unirrigated, quite happy to perform on their own, dry grown rootstock. An astonishing amount of flavour, exquisitely balanced, a truly mesmerising effervescent red wine.

Hand picked bunches of Chardonnay and Pinot Noir are crushed into a selection of predominantly seasoned French oak barriques for vinification by Petaluma's own strains of yeast. Upon completion, batches are inoculated to a bacteria isolate for malolactic, adding complexity to the wine while softening the high natural acid. Components are then assembled and treated to a secondary fermentation in bottle. The finished Croser is aged on yeast lees for a minimum of three years before disgorgement, liqueur dosage and reseal.

The propitiously brisk climes in Piccadilly Valley encourage a complete ripening of grapes, even during the coolest growing seasons. A confluence of myriad aspects and varied soil types over some of the oldest rock formations, it yields a subtle diversity of flavours from each parcel of vine within the one valley. Defined by the chiselled elegance of Adelaide Hills Pinot Noir, pomegranate, wild strawberry and cherry aromas burst form the glass and flood the palate, gorgeous biscuit notes adding complexity and style. Creamy and delicious after eighteen long months on yeast lees.

A solidly structured, mostly Pinot Noir wine with a slightly lesser proportion of Chardonnay, an assemblage of the current Croser vintage with components of reserve wines from several earlier years, each contributing distinctive qualities to the final Cuvee. A stylistic evolution after many semi annual releases, the aim being to refine and advance the unique flair while remaining true to the magnificent aperitif style of classic Croser.

Croser is only disgorged after ten years repose in bottle under the Petaluma wineworks, ensuring extended contact on yeast lees, which contributes to the extravagance and luxurious palate weight. Fashioned from elite parcels of fruit grown to the finest vineyards in Piccadilly Valley, Croser is at once bigger in colour and more intense in flavour, dominated by the ripe jonathon apple of Pinot Noir. Grapes grown to the cooler south and west facing slopes contribute impressive natural fruit acids which infuse the wine with exquisite flavours and dazzling aromas.

Francois Coueslant was a pioneering viticulturalist who made a major contribution to bringing Australian wines to the world. Winemaker manager at Tahbilk from 1877 to 1886, described in the Australasian at the time as a practical vigneron from France, a gentleman of progressive ideas, ever ready to adopt new and improved methods. Coueslant successfully lead the fight against the vine killing phylloxera louse, built the iconic estate tower and added Chateau to the Tahbilk label, a moniker which remained in use until 2000.

Romsey Brut is a blend of very slow ripening Chardonnay and Pinot Noir with often a substantial proportion of reserve wine to ensure that the authentic House Style of Cope-Williams is maintained year after year. Winemaker Gordon Cope-Williams is indeed from the Old Country and his passions for bubbly and cricket have manifested themselves in a cricket pavilion on top of a sparkling wine maturation cellar, next to a cricket pitch. Established in the seventies, the Cope-Williams winery releases discreet quantities from within a very limited range.

Cofield practice careful hand picking of fruit and rigorous barrel selection to enhance the ultimate quality in their wines. The careful culling of fruit and barrels also leads to smaller production, limiting quantities of each wine from between 100 to 600 dozen, dependent on vintage quantities and quality. Cofield take aim at assembling one of Australia's most essential sparkling red wines each year, based on the best stocks from the finest vintages.

To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Crafted to the traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second ferment in bottle. This is what creates the sparkle, infuses complexity and introduces texture.
